Lemon Ricotta Sourdough Pancakes

Ingredients
1c ricotta
2 eggs
1/2c sourdough discard
1/2c milk
1 lemon zest
3 tbsp sugar
1 tsp vanilla
1c AP flour
1/2 tsp salt
1 tsp baking powder This recipe makes about 5-6 medium sized pancakes.
Directions
In a large bowl mix all the wet ingredients - ricotta, eggs, sugar, vanilla, milk, discard and lemon zest.
Add flour, salt and baking powder. Mix until just fully incorporated.
Turn your pan on medium and let heat up.
Let sit for about 5-10min.
Once your pan is hot butter it and spoon your pancake batter on.
Cook each pancake about 2mins on each side or until you see bubbles popping through the middle.
